Recipe: Rasmalai
Ingredients
Rasmalai
32 ounces ricotta cheese
1 cup sugar
Rabri (liquid)
16 ounces half & half
1 small carton heavy cream
1/2 cup sugar
5 whole cardamon seeds, crushed
Garnish
1 tablespoon finely shredded pistachio nuts
1 tablespoon shredded coconut
Instructions
Mix ricotta cheese and 1 cup sugar in a baking dish. Make into a paste with a fork. Bake in 350 degree oven for 35 minutes.
In a separate pan, mix half & half, cream and sugar. Boil on low heat until 1/3 of the liquid evaporates. Add cardamon seeds, cook for a few more minutes. Cool and cut into one inch squares.
Pour hot thick milk (rabri) over the cheese squares and refrigerate. When chilled, sprinkle shredded pistachio nuts and coconut on top and serve.
